The Difference Between Baking Soda and Baking Powder
In cakes, cupcakes, muffins, etc. the baking soda/powder is crucial for the rise and final texture of the baked good. It’s all about balancing acidic and basic ingredients. These cupcakes didn’t have any acidic ingredients so relied on baking powder. If a recipe does have acidic ingredients it may use just baking soda or a combination of both baking soda and baking powder.
